What a great idea! Book Sale


I have been in charge of the book fair for my elementary school this year, and let me just say Thank you first to anyone who has had to help or listen to me whine about this. DON'T get me wrong! I really like doing this. It's just a lot of work. And more yet, it is a little emotionally draining because of all the children that come to the book fair with $1.00 or $2.00 and never have enough money and leave very disappointed.
So I have come up with a great plan. And if anyone would like to try this or have suggestions for me please comment.
I am going to send notes to the parents of the school asking to donate any grade school aged books and then we will sale them at great low - everyone gets to buy something prices! I think it will be a great chance for ALOT of kids who otherwise get nothing. And a no cost to PTO but the money made can be used wisely for great stuff.
So what do you all think. Any questions or comments, PLEASE send to me. Any books, would also be helpful. Otherwise, think about trying this in your own schools. Have a great day!

CHORES CHORES - WHAT A BORE!


Lets chat about chores for a minute. I am constantly trying to decide how much is too much for my kids to do as chores. I search the web frequently, trying to find new charts or ideas to get my kids interested and excited about helping. But I want to know what real moms (like you and me) do to get the jobs done.
My biggest problem is waiting for the kids to get home to do the chores. I feel like if I wait all day to do it, I could have had the job done already. But I know this doesn't help learn responsibility and stuff.
So if you have any ideas about what to make them do for daily chores, or how much is too much, or whatever... I would love to here from you! Thanks

COUPON CRAZY!


For all of you that want to save a little money, this is a great way to do it. I have found a site that has Target Store coupons. It's almost like a little hidden treasure. Many of the Target coupons match up with the Kraft and Nabisco coupons.

Go To: http://www.hotcouponworld.com/ this is where you get the Target coupons. You may need to register, but its worth it. It will show a list of products or click on the "show Coupons" button and it will show a picture of the product instead. (this is the easiest). Then it will let you decide how many of each coupon you want to print. It's up to you, but I only print 4-5 and then only use 2 at a time. (One greedy couponer gives the rest of us a bad name)

Then go to: http://www.coupons.com/ and match up your target coupons with the Manufactures coupons for great savings!

Keep in mind that some Targets are Super Targets, so some of the products arent carried at every store. But it really is worth checking it out!

Heart Felt sorrow

I would like to take a moment and wish my daughter Kelie and her husband Josh my heartfelt sorrow.
Saturday night around 8:30 Josh stopped by our house to pick up his pupper we had been babysitting. (oh the things you do as a grandma) He had just returned from visiting his grandfather Albertson who only two weeks ago had been told he had cancer of the throat and spine. We had a fun talk about his visit and encouraged him that all would be well. Around 11:00 Kelie called to let us know that Grandpa had passed away.

Cancer is mean and wicked on the body, and beliving that we all only come to this earth to get a body I have to say how lucky he is to be able to go home to our Loveing Heavenly Father. I still know the sting of death and hurt for those who are left here on earth.

How lucky for Josh to have been there in the last hours and in the presence of angles. I know they were in the wings just waiting till Josh and his brother left to take Grandpa home.

God Bless Josh and his family and his grandfather.

Over The Top Nachos!



These Nachos looked so good, I had to share them. They would be great for a Saturday afternoon of weeknight quick and easy dinner. I found them on the Albertson's website. http://www.albertsons.com/ Enjoy!

Servings:
1 pound ground beef
1 onion, finely diced
salt and pepper to taste
2 cups shredded Cheddar cheese
1 (16 ounce) can refried beans
1 (14.5 ounce) package tortilla chips
1 fresh jalapeno pepper, sliced

In a large frying pan, brown ground beef with onion, salt and pepper over medium heat. Break the meat into very small pieces while it is cooking. After the meat is thoroughly cooked, drain off the grease.
Arrange chips on a microwavable platter. Spread beans over the chips. Layer with 1/2 of the cheese, the ground beef mixture, and remaining cheese. Arrange jalapeno peppers on top.
Microwave on medium-high until cheese has melted. Serve immediately.

Get out those Crock Pots!

Here are a bunch of crock pot recipes I hope you will enjoy. I love crock potting, its the only way I can get dinner on the table before 9:00. Have a great day. If you have any crock pot recipes, please share them.

Crockpot Chicken Enchiladas

This looks like a great recipe. The only thing is, I would probably double it or use small corn or white flour tortillas.

2 chicken breasts
1 can cream of chicken soup
1 small can green chilies (optional)
1/3 c. salsa
1 chicken bullion cube

Put all ingredients into crockpot and cook for about 5 hours on low or 3 hours on high. Every crockpot is different. Mine was actually cooked on high in about 2 1/2 hours.
Make 1/2 c. Minute Rice (with a chicken bullion cube in the water)

When chicken in the crockpot is done, shred up. Mix 1/4 c. sauce with the rice. Leave remaining sauce to top enchiladas with. Get out 5-6 flour tortillas. Inside each tortilla, layer:
rice
chicken
cut olives
grated cheese
chopped green onions

Roll up each tortilla and put into baking dish. Top with remaining sauce and grated cheese. Bake at 350 degrees for 30 minutes or until heated through and cheese is melted. Serve with sour cream if desired. Makes 5-6 enchiladas.

Crock Pot Chicken Marinara

2-3 thawed chicken breasts
2 jars marinara/spaghetti sauce
salt,
pepper,
garlic powder
1/2 c. parmesan cheese (more or less)
1 c. mozzarella cheese (more or less)
seasoned breadcrumbs
cooked spaghetti or penne noodles (or whatever noodles you like)

Put marinara sauce, salt, pepper, garlic powder, and chicken breasts in a crockpot until chicken is cooked, about 6 hours on low. Then about 10-15 minutes before dinner, sprinkle a nice layer of bread crumbs, then parmesan cheese, then shredded mozzarella cheese on top. Serve when cheese is melted, put over noodles.

A longer version is to cook the chicken in the oven in a 9x13 pan with the sauce but not covering the chicken. Coat the chicken in breadcrumbs. Cook until chicken is cooked and a little crispy from the breadcrumbs---about 1 hour 20 minutes at 350 degrees then add cheeses at the end...

Lazy Lasagna

This is so fast to make, and really good for a crockpot lasagna! It makes A LOT. I usually 1/2 the recipe for our family.
1 lb. ground beef
12 oz package egg noodles
32 oz jar spaghetti sauce, your choice of flavor
8 oz. mozzarella cheese, shredded
16 oz. cottage cheese

Brown ground beef - drain fat. While beef is browning, cook noodles in saucepan according to directions. Drain and return noodles to saucepan. Stir spaghetti sauce into browned and drained ground beef. Stir mozzarella and cottage cheeses into cooked noodles. Layer 1/3 of the sauce with ground beef into the bottom of the crockpot. Top with 1/2 of the noodles and cheeses. Layer in 1/2 of the remaining sauce with ground beef, followed by all the remaining noodles and cheeses. Top with the rest of the sauce. Cover and cook on low 3-4 hours.

Easy Chicken Santa Fe

1 can black beans, rinsed & drained
2 cans corn, drained
2 c. salsa
5-6 skinless boneless chicken breast halves, abt 2 lbs (no fat)
1 c. shredded cheddar cheese

Mix together beans, corn, & 1/2 c. of the salsa in 4 qt. slow cooker. Top with chicken breasts, then pour the remaining salsa over them. Cover & cook on high 2 1/2-3 hours or until chicken is tender & white throughout, don't overcook or chicken will be tough. Sprinkle with cheese on top, cover & cook until cheese is melted, abt 5 minutes. Top with fresh cut tomatoes. Serve inside warm soft tortillas.

Italian Crockpot Chicken

2 cans cream of chicken soup
1 small packet italian seasoning (with the ranch packets in the store. I got Good Seasons brand)
1 brick cream cheese (I use non-fat)
3 large chicken breasts, cubed

Combine and cook for 6-8 hours on low. Serve over rice or noodles.
This is so good! I also add a little water to mine to get it to the consistency I want it. Add more chicken or less depending on your taste. Also works with pre-cooked chicken, just cook less time.

Chicken Hurry!

Heres a new recipe to start you week out right. I may try putting it in the crock pot instead. Serve it over white rice with steamed carrots.



Chicken Hurry

Ingredients
2 1/2-3 lbs cut-up chicken
1/2 cup ketchup
1/4 cup water
1/4 cup packed brown sugar
1 (2 ounce) envelope dry onion soup mix
Directions
1. Arrange chicken parts in a casserole dish.
2. In a small bowl combine the ketchup, water, sugar and soup mix.
3. Mix together well.
4. Spoon over chicken, making sure the sauce is on every piece.
5. Bake covered at 350F for one hour.
